- ½ cup all-purpose flour
- ½ cup yellow cornmeal
- ½ tsp salt
- ¼ tsp baking soda
- ½ tsp black pepper
- 1 large egg
- ½ cup buttermilk
- 1 cup minced onion (optional)
- 2 cups vegetable oil
Combine the first five ingredients in a bowl, making a well in the center of the mixture.
Stir together egg and buttermilk; add to dry ingredients.
Stir until moistened, then stir in onion. Heat oil in a skillet (cast iron is best) to a temperature of 375 degrees.
Drop batter by the tablespoonfuls into oil and fry (in batches) 3 minutes on each side or until golden brown.
Drain on paper towels. Serve immediately.
