Ketogenic Recipes – Brownies

  • 1/2 cup butter or coconut oil
  • 1 cup granular erythritol (Swerve)
  • 1 tsp liquid stevia
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup cocoa powder
  • 1/2 cup almond flour
  • 1/4 tsp pink Himalayan salt
  • 1/4 tsp baking powder FROSTING:
  • 3 Tbsp butter or coconut oil, softened
  • 3 Tbsp cocoa powder
  • 1 Tbsp peanut or almond butter
  • 1 tsp vanilla
  • 1/4 cup confectioner’s erythritol (Swerve)
  • 1 tsp liquid stevia dash of pink
  • Himalayan salt

Preheat oven to 350 degrees. Grease an 8×8 brownie pan with butter or coconut oil.

FOR BROWNIE BATTER, in a large saucepan, melt butter/coconut oil.

Stir in erythritol, beaten eggs, liquid stevia and vanilla.

Beat in cocoa powder, almond flour, salt and baking powder until well mixed.

Spread into prepared pan. Bake in preheated oven 25-30 minutes. Do not overbake.

FOR FROSTING, combine butter or coconut oil, cocoa powder, vanilla, swerve, peanut/almond butter and liquid stevia. Spread over warm brownies. Makes 16 brownies.
