Dublin Coddle

Whether you are Irish, or just Irish at heart, St. Patrick’s Day is everyone’s favorite day of the year to eat, drink and be merry. Grab a pint of Guinness and enjoy this hearty, Irish meal. Sláinte!

  • 1 pound bacon, thick cut
  • 1 pound pork sausage
  • 4 large potatoes
  • 3 medium yellow onions
  • 6 tablespoons fresh parsley, chopped
  • 4 cups Beef stock
  • ¼ tsp black pepper

Preheat oven to 450 degrees

Fry the bacon in a large Dutch oven, flipping over the slices with a fork. Cook until golden brown and crispy. Drain the bacon, blot off the excess grease, and cut into pieces. Pour most of the bacon grease out of the stew pot and into a small bowl.

Wash and peel 4 large potatoes. Slice each potato into small chunks. Peel and slice onions into ¼” slices. Cut sausage into thick slices.

Pour 4 cups of Beef stock into a saucepan. Cover and bring to a boil.

In the Dutch oven, brown the pork sausage. When browned to your liking, add the following ingredients to the Dutch oven: bacon, onion, potato, parsley, & black pepper.

Pour the hot Beef stock over the ingredients in the Dutch oven.

Cover Dutch oven & place in the preheated oven.

Cook at 450 degrees for 40 minutes, then remove foil and let cook for an additional 20 minutes or until the potatoes are golden brown.

Serve in bowls with a side Irish soda bread.
